My posts this week will be a little sporadic, as it’s my first week in the blogging world, but I will do my best to be faithful. 🙂
As an avid blog reader, I always enjoy viewing themed posts, roundups, or weekly segments regarding different topics. I really want to try to incorporate these into my blog, so I’m starting off with something called “How-to Tuesday”!! As always, suggestions are more than welcome. Now, let’s begin. Enter SWEET POTATOES!
Is it just me, or are roasting these bad boys a little intimidating?
If you overcook them, they’re mushy. If you undercook them, they’re pretty much flavorless orange rocks like these:

Enough of that, on with the recipe! (Nutrition Facts taken from wegmans.com)
Perfect Oven-Roasted Sweet Potatoes
- Serves: 6 as a side dish
- Prep Time: 10 min
- Cook Time: 35-40 min
- Total Time: 45-50 min
6 yams or sweet potatoes, peeled, cut in 1 1/2 to 2 inch pieces (about 5 cups)
3 Tbsp. Extra Virgin Olive Oil (or your favorite oil)
A good drizzle of Pure Maple Syrup
Healthy dashes of cloves and rosemary
Salt and pepper to taste
Preheat oven to 400 degrees.
1. Toss yams with oil and maple syrup in medium bowl; season to taste with salt, pepper, and spices. Spread single layer on baking sheet or pan.
2. Roast on center rack of oven 35 min (turning after 15 min), until golden-brown and tender.
Serving size (about 3/4 cup)

0 mg cholesterol
15 mg sodium
Not to mention the boatloads of Vitamin A!
