Roasted Grape and Dark Chocolate PB Oatmeal – A Dancer’s Live-It

Happy 103rd birthday Lucille Ball!!!!

For those of you who don’t know, Lucille Ball was an actress famous for her role as Lucy on the sitcom I Love Lucy. Set in an apartment building in New York City, I Love Lucy centers on Lucy Ricardo (Lucille Ball) and her singer/bandleader husband Ricky Ricardo (Desi Arnaz), along with their best friends and landlords Fred Mertz (William Frawley) and Ethel Mertz (Vivian Vance). Lucy is a daffy and ambitious woman constantly striving to become a star along with Ricky, always getting herself in the strangest situations. The physical comedy done on the show is what made it so successful. Her legacy still lives on as “America’s favorite red-head”, and people of all generations still enjoy Lucy’s antics as much as they did over 60 years ago when the show first premiered.

I know I do! It remains my favorite TV show ever, along with The Golden Girls. She’s the Queen of Comedy, and boy do I LOVE LUCY. 🙂

Now, onto the recipe!!

Before I made this, I googled “Roasted grape dark chocolate oatmeal” just to make sure no one else had made the recipe before me, and it turns out that no one had! I saw this as a golden opportunity to design my own recipe that would accentuate the deliciousness of grapes and dark chocolate. YUM. (With a touch of peanut butter on top because peanut butter).

Roasted Grape and Dark Chocolate PB Oatmeal

  • Prep Time: 10 min
  • Roast time (for grapes): 20 min
  • Cook Time (for oats): 5 min
  • Total Time: 35 min

Ingredients:
For the grapes:
10 red seedless grapes, halved
1/4 tsp vanilla extract
1/4 tsp honey

For the oats:
1/2 cup unsweetened vanilla almond milk (or milk of choice)
1/2 cup water
1/2 cup rolled oats
1/4 tsp vanilla extract
1 egg white (optional, but I need the protein!)
1 tbsp. Hershey’s Special Dark cocoa powder
1/2-1 tsp of honey (optional, I did not use)
Dash of nutmeg
Pinch of salt
1 tsp peanut butter
Roasted grapes

Directions

(For grapes)

  1. Preheat the oven to 350 degrees Fahrenheit and lightly mist a small ramekin with cooking spray. While the oven is heating, halve the grapes.
  2. Place them in the ramekin and toss them around with the vanilla extract and honey. Place in oven for 20 minutes, or until they’re nice and soft and bubbly.
  3. Remove from the oven and set aside.

(For oats)

  1. Bring milk and water to a boil, add oats, and reduce heat to medium. Stir.
  2. Once more of the liquid has absorbed, add in the vanilla extract, pinch of salt, and the optional egg white. Whip the oats constantly until most or all of the “white” has disappeared.
  3. Now add in the cocoa powder, nutmeg,  and optional honey, stirring until all of the powder has been combined with the oats.
  4. When the consistency of the oats are to your liking, transfer to a bowl and top with the roasted grapes and the peanut butter. You could also top it with a few nuts or dark chocolate chunks! Enjoy! 🙂

The sweetness of the grapes paired with the bittersweet dark chocolate is an amazing combo! As for the peanut butter…well, that’s self-explanatory.
