Now that I have your undivided attention, I’ve got a great oatmeal recipe for you this morning that is sure to put you in a happy mood that’s just in time for the weekend. That’s right, it’s PB Chocolate Chip Cookie Baked Oatmeal. All the warm, gooey deliciousness of your favorite cookie baked with hints of your favorite nut butter! Well, at least my favorite…
I knew I had to combine this recipe with this one by The Oatmeal Artist to create the perfect baked oatmeal mash-up, so that’s what I did! This recipe is also packed with protein to keep you full and focused all morning, so let’s get to it shall we??
PB Chocolate Chip Cookie Baked Oatmeal
(inspired by The Oatmeal Artist’s recipe)
- Serves: 1
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
1/4 of a banana, mashed
3 tbsp. Liquid Egg Whites (or 1 egg white)
2 tbsp. plain nonfat Greek yogurt
1/2 tsp vanilla extract
1/2 cup rolled oats
1.5 tbsp. PB2 (or powdered peanut butter)
1/4 tsp baking powder
1/4 tsp baking soda (gives it the “cookie” taste)
Pinch of salt
Small handful of chocolate chips (I used about a tsp and a half)
- Preheat oven to 350° Fahrenheit and spray a small ramekin or single-serving baking dish with nonstick cooking spray. Set aside.
- Mix together the mashed banana, egg white, yogurt, and vanilla extract. Now add all the dry ingredients to the mixture except the chocolate chips and combine well.
- Fold in the chocolate chips. Transfer to your baking dish and baked for about 20-22 minutes (depending on how “baked” you want it)
