Time to start another week…
It’s been quite a lovely holiday week but its time to sprint through this week of finals, a final performance, and then go home again for a month. I know, it was a bit of a weird break for me but it was MUCH needed!

But guess what, it’s officially December!!! Happy December 1st everyone!
If you eat meat and you’re still a little sleepy from a load of turkey, I’ve got a delicious oatmeal recipe for you to perk up and push through the day! I was going to try a new winter-themed recipe today, but considering that it’s almost 60 degrees outside…I’m gonna say no to that. My body gets so confused by these weather changes, does yours?
Anyway, this recipe was inspired by my wonderful boyfriend because he LOVES to drink café mochas. They’re pretty much his go-to winter drink next to hot chocolate! We had an awesome time together this past week and I’ll be seeing him again soon. 🙂
So, you’ll start with the base liquids in a half-to-half ratio, except you’ll use half a cup of coffee instead of water (and then your half a cup of milk). The banana in this recipe is used for sweetening purposes, so make sure it’s a ripe one! Feel free to omit it and use a couple teaspoons of maple syrup if bananas aren’t your thing, cause I know some people hate them. The PB2 is used for a healthy fat source, so you may omit it and use regular peanut butter but I recommend the PB2 because the flavor isn’t as strong but it’s soooo yummy. Or maybe try a tsp of coconut oil instead if you’re feeling adventurous!

Café Mocha Oatmeal
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 10 minutes
- Total Time: 12 minutes
1/2 cup milk of choice (I used unsweetened vanilla almond milk)
1/2 cup coffee (brewed fresh that morning or day-old)
1/2 a ripe banana, mashed well
1/2 cup rolled oats
2 tbsp. plain, nonfat Greek yogurt
1/2 tsp vanilla extract
1/2 tbsp. cocoa powder
Pinch of salt
2 tsps. PB2 (or regular peanut butter, but I don’t recommend it)
3 tbsp. Liquid Egg Whites (or 1 egg white)
- In a small saucepan, bring the milk and coffee to a boil and add in mashed banana and oats and reduce heat to medium. Stir.
- Wait about 2 minutes and add in the Greek yogurt and stir to combine.
- Wait another couple minutes and add in the vanilla extract, cocoa powder, and salt. Stir to combine and then add in the PB2. When the oatmeal looks just about done, reduce the heat to low and add in the egg whites.
- Mix well in a whipping motion until all traces of the egg are gone. Transfer to a bowl and top with cinnamon if you’d like!
