GOOD MORNING AND HAPPY FRIDAY! 🙂 Woooooo we made it!
And yes, that’s right, we’re getting fancy here on the blog today!
But first, let me talk about my coffee:
Ahhh honestly, is there anything better than sitting down in the morning with a hot beverage in your hand that makes you feel cozy, calm, (before the caffeine kicks in), and comfortable? Sipping on a hot beverage every morning makes me happier. That’s not crazy right? 🙂 I love it!
Alright sorry that’s all, back to you oatmeal.
This is basically a copycat recipe of The Oatmeal Artist’s French Silk Pie Oatmeal, but I changed a few of the ingredients around to meet my nutritional needs. Have you ever had French Silk Pie before? The filling is not as light and airy as chocolate mousse but no where near as dense or heavy as chocolate cheesecake. That’s why the pie is called “French silk”. It’s silky smooth, rich, decadent, and truly incredible….
….sorry where was I?!
Oh yeah, OATMEAL.
French Silk Pie Oatmeal
(Adapted from The Oatmeal Artist)
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 8 minutes
- Total Time: 10 minutes
1 cup milk/water (I used 1/2 unsweetened almond milk 1/2 water)
1/2 cup rolled oats
Pinch of salt
2 tbsp. + 2 tsp plain, nonfat Greek yogurt
1/4 tsp vanilla extract
**1 tsp maple syrup, to taste (optional)** (I used some stevia drops)
1 tbsp. vanilla protein powder
1 tbsp. cocoa powder
2 tbsp. + 2 tsp plain, nonfat Greek Yogurt
1 tsp mini chocolate chips
- In a small saucepan, bring liquid to a boil, add oats, salt, and reduce heat to medium. After about a minute, stir in the Greek yogurt and vanilla extract until all traces of “gurt” are gone.
- When the mixture has thickened a little, add the optional sweetener and protein powder. Stir again.
- When the oatmeal is basically done, take out 1/3 of the mixture and set aside. Add the cocoa powder to the remaining oatmeal in the saucepan and stir. (You may need to add more milk if it’s too dry).
- Transfer the chocolate porridge to a bowl to serve and top with the vanilla oatmeal. On top of that, add the remaining Greek yogurt and mini chocolate chips.
- ENJOY! 🙂
It was just that good.
Have a very Fancy Friday! 😉 XO
