Happy Thursday as well! As promised, I’ve got a delicious oatmeal recipe for you that combines some of the three best flavors ever….
Berries, almond butter, and coconut. The three best friends anyone could have. This one is a stovetop recipe, so get your saucepan ready! 🙂
Nothing fancy in here, just my staple ingredients and a few other additions.
Like berries, of course.
And maybe almond butter….
And I guess shredded coconut would be nice too…
Berries, Almond Butter, and Coconut Oatmeal
(Adapted from The Oatmeal Artist)
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 10 minutes
- Total Time: 12 minutes
For the Oats:
1/2 cup-1 cup water or milk of choice (I did 1/2 cup of each)
1/2 cup rolled oats
Pinch of salt
2 tbsp. plain, nonfat Greek yogurt
1/4 tsp almond extract
3 tbsp. Liquid Egg Whites
*optional sweetener* (I used stevia drops)
For the Top:
1/4 cup frozen mixed berries, or fresh
1/2 tbsp. unsweetened shredded coconut
1 heaping tsp almond butter (creamy or crunchy)
- In a small saucepan, bring almond milk and/or water to a boil, add oats and pinch of salt, and reduce heat to medium. Stir.
- After about a minute, add in the Greek yogurt and stir vigorously until all white yogurt “clumps” are gone. This might take a bit of finagling, but they’ll dissipate. Add in the extract and stir.
- Now wait until the mixture thickens up just before it’s almost done and turn the heat to low. Pour in the egg whites and whisk until all traces of “white” are gone. Be patient!
- When you’re ready, transfer the oats to a bowl and top with the berries, coconut, and almond butter. Document it and marvel in its glory. 😉
