There’s no better feeling than dropping into your OWN bed after a longggg car ride and waking up to a gorgeous, sunny morning reflecting the snow in your backyard.
(Okay so the snow isn’t ideal, but you get the point!)
So as the title of this post says, it’s National Pancake Day!! 🙂 How appropriate that it’s on a Saturday, because I always have my pancakes on Saturdays.
They must’ve known! 😉
I really wanted to make something spectacular, like Tiramisu or Strawberry Shortcake Pancakes but we didn’t have many ingredients in our house so I improvised! When I opened our fridge and saw a lone zucchini in need of attention, I knew exactly what I wanted: Zucchini Bread Protein Pancakes!!!
I remembered that The Breakfast Drama Queen had made these pancakes last summer, so I adapted my recipe from her. My picture didn’t turn out as well as hers of course, but boy were they AWESOME. The pancakes are super moist and fluffy, and perfect for any time of the year!
Vegetables, meet breakfast. Hurry, your maple syrup is waiting!
Zucchini Bread Protein Pancakes
(Adapted From The Breakfast Drama Queen)
- Serves: 1
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
1/2 cup shredded zucchini
1/4 cup milk of choice (I used unsweetened almond)
1 egg white
1/2 tsp vanilla extract
1/4 tsp molasses
1 tbsp. cottage cheese (1%, 2%, whatever you want)
1/2 cup rolled oats
2 1/2 tbsp. vanilla protein powder (or more oats if no protein powder)
1/2 baking powder
1/8 tsp baking soda
Dash of nutmeg
1/4 tsp cinnamon
Raisins for topping
- Preheat a nonstick pan to medium-low heat and spray with PAM. (Just in case!)
- Add everything to an immersion blender in the order listed except the raisins and blend until smooth.
- Add about a 1/4 cup of batter to the pan for each pancake and cook for 2-3 minutes (or until bubbles appear). Flip, and cook for 1 – 2 minutes on the other side. Adjust the stove heat as needed.
- Top with some pure maple syrup and raisins and dig in!
