I was getting so stir-crazy without blogging, but I’m back! The college dance conference was a big success; both of my school’s pieces made it into the big Gala Concert and the piece I performed in got a standing ovation. 🙂 I’m so proud and happy!!
Let me just say, there’s nothing better hearing an audience erupt in applause. “…like waves of love coming over the footlights and wrapping you up”. No one except my mom knows what movie that quote is from…anyone ever hear of All About Eve? But anyway, just to know that you were responsible for making all those people smile and cheer is one of the reasons I love to perform. I crave it!
While I was there the hotel breakfast was complimentary, but I HAD TO EAT INSTANT OATMEAL PACKS. It was so annoying, I missed my real oats!! Sometimes I couldn’t even eat them because they were so processed and sugary, and then I asked myself why I ever liked these in the first place. But hey, gotta start somewhere right?! Speaking of real oatmeal, here’s a new recipe I came up with because I missed REAL oatmeal.
It’s Monday, so chocolate, blueberries, and peanut butter seemed appropriate.

Blueberry Peanut Butter Chocolate Oatmeal
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 10 minutes
- Total Time: 12 minutes
1/2 cup milk of choice and 1/2 cup water (I used Silk unsweetened vanilla)
1/2 cup rolled oats
Pinch of salt
2 tbsp. plain, nonfat Greek yogurt
1/4 tsp vanilla extract
1 tbsp. cocoa powder
3 tbsp. Liquid Egg Whites (or 1 egg white, but protein content will change)
1/4 cup blueberries (I used frozen)
1/2 tbsp. peanut butter (I use Wegmans Natural)
- In a small saucepan, bring liquid to a boil, add oats and salt, and reduce heat to medium.
- Wait about a minute and add in the Greek yogurt. Stir well until the yogurt is incorporated in the mixture. After another couple minutes, add the vanilla extract and cocoa powder. Stir again until the powder has absorbed in the liquid.
- When the mixture has thickened up quite a bit, reduce heat to low and slowly pour in the egg whites. Whisk well to combine until all traces of “white” are gone. This could take up to a minute, so be patient!
- Transfer the oats to a bowl and top with your blueberries and peanut butter. Alternatively, you could’ve added these along with the cocoa powder and vanilla extract. It’s your choice! 🙂
