Just a little entertainment for you on this wonderfully gloomy Wednesday! 🙂
But you know what we need? A little joy.
Or better yet, a little almond joy! 😉
Thanks to the glory of The Oatmeal Artist for her fabulous recipes, namely, this Almond Joy Oatmeal.
She uses coconut milk for her base, but I didn’t have any so I used regular unsweetened vanilla almond milk. If you have coconut extract you could probably use a 1/4 tsp of that too! (I didn’t have any of that either, mine’s at home).
Other than that, you’ll need some banana for sweetness, cocoa powder, almond extract, and shredded coconut.
Then if you want to be weird like me, you could add in PB2, Greek yogurt, and Liquid Egg Whites for protein. I promise you can’t taste the PB2 at all!

Almond Joy Oatmeal
(Adapted from The Oatmeal Artist)
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 10 minutes
- Total Time: 12 minutes
1/2 cup unsweetened vanilla almond milk + 1/2 cup water
1/2 cup rolled oats
Pinch of salt
1/4 of a ripe banana, mashed well
2 tbsp. plain, nonfat Greek yogurt
1 tbsp. cocoa powder
1/4 tsp almond extract
1 tbsp. PB2
3 tbsp. Liquid Egg Whites
1/2 tbsp. shredded coconut
- In a small saucepan, bring all liquids to a boil and add in oats, salt, and mashed banana. Reduce heat to medium and stir well.
- After about a minute, add in the Greek yogurt and stir again. When more of the liquid has absorbed, add in the cocoa powder, almond extract, and PB2. You’re also welcome to save this for the topping!
- Just before the oats are done cooking, reduce heat to low and slowly pour in the egg whites. Whisk until all traces of “white” are gone. This could take up to 2 minutes, so be patient!
- Top with the shredded coconut and PB2 if you desire! Maybe some chopped almonds too!
