Adapted Recipe: (The Oatmeal Artist’s) Snickerdodle Cookie Baked Oats

Snickerdoodle cookie season may be over, but not for me! Warm, cinnamon-y, and full of that familiar holiday comfort.

Recently, The Oatmeal Artist made a recipe that reminded me how quickly time goes by.

In no time at all, it will be Christmas again.
Seriously.

My Dad and I always talk about this every time Thanksgiving, Christmas, or New Year’s is over. Time goes by in the blink of an eye, and pretty soon we’ll be hauling out the tree again!

But for now, let’s focus on summer!:)

And this delicious recipe.

All you have to do is blend everything up, bake it, top with cinnamon, and voila. So simple!

Here’s what you’ll need:
-Peeled and diced zucchini
-Milk of choice
-Greek yogurt
-Liquid Egg Whites
-Applesauce
-Peanut Butter (trust me, but you can omit)
-Butter and vanilla extract!

Snickerdoodle Cookie Baked Oats
(Adapted from The Oatmeal Artist)

  • Serves: 1
  • Prep Time: 10 minutes (includes preheat time)
  • Cook Time: 22 minutes
  • Total Time: 32 minutes

Ingredients:
1/2 cup’s worth of peeled and diced zucchini
2 tbsp. milk of choice, or water
2 tbsp. plain, nonfat Greek yogurt
3 tbsp. Liquid Egg Whites
1/2 cup rolled oats
Sweetener to taste (I used Stevia)
1/8 tsp butter extract (optional, but recommended)
1/2 tsp vanilla extract
2 tbsp. unsweetened applesauce
1/2 tbsp. peanut butter
1/4 tsp baking powder
1/8 tsp molasses
For topping:
Cinnamon and sugar!

Directions:

  1. Preheat oven to 350° F and spray a single-serving ramekin with non-stick spray. Set aside.
  2. Puree all of the ingredients (except for the cinnamon and sugar) in a food processor or hand blender until smooth and batter-like.
  3. Transfer to the prepared ramekin and top with the cinnamon and sugar.
  4. Bake for about 22-25 minutes, or until top is firm. Top with more cinnamon and sugar if desired!
  5. ENJOY!:)
