Vegetarian Dinner Recipe Roundup!

Good morning everyone!!! 🙂

How are you doing on this lovely morning??

I just got home from a Vinyasa yoga class and it was great!
Actually, what’s great is that I live 5 minutes away from the studio I go to, so waking up at 5:45 for the 6am class was super easy. HAHA not….it was a little tough to get out of bed this morning, but coffee is happening now!

So since my yoga studio is convenient for my life, I thought about something else that’s convenient: easy dinners! Who wants to come home after a long day of work or classes and slave over a hot stove for an hour? Not me. 30 minutes, max!

My dad found these delicious recipes on My Fitness Pal, so this roundup is for him! 🙂

These recipes are to prove that “Meatless Monday” shouldn’t just be on Mondays.
What about “Turkey-Free Tuesday”? Or “Thanks-For-The-Veggies Thursday”? I don’t know, but you should do it!

14 meatless recipes, why not try it for 2 weeks?

Vegetarian meals are not only nutritious and delicious, but also budget-friendly, thanks to staples like beans, lentils, eggs, pasta and vegetables. Go for it!

The black bean and avocado relish can also be used over cooked chicken or fish in case you also need to cater to non-vegetarians. Recipe makes 4 servings at 2 corn cakes + 1/2 cup relish each.

7. Baked Ziti & Summer Veggies | Cooking Light
Fresh basil and oregano gives this dish a healthy Italian flair. Recipe makes 4 servings at 1 1/2 cups each.

8. Spicy Zucchini Black Bean Burger | The Healthy Maven
Recipe makes 4 servings at 1 patty each.

You can make this ahead of time and refrigerate for the next day. Recipe makes 6 servings at 1 cup each.

11. Black Bean Spinach Quesadilla | Calories In, Calories Out

Grilled zucchini is placed on a nice big tortilla topped with kale, red onion, tomatoes, cheese and a heaping dose of hummus. Recipe makes 2 servings at 1 wrap each.
