Fishy Fridays: Heavenly Halibut ? A Dancer’s Live-It

F is for finally, because the weekend is finally here
R is for relaxation, which is what I need to do

Today’s recipe features a very delicious and versatile fish: halibut! Did you know that a fillet of halibut packs in a whopping 36g of protein?! That’s awesome!! Though most halibut is available fresh as steaks, fillets, or roasts, much halibut is frozen as of its availability. Halibut is rich in various nutrients such as selenium, magnesium, phosphorus potassium, vitamin B12, niacin, vitamin B6 and omega-3 essential fatty acids. Talk about a power-packed dinner!

The rich, cheesy topping goes perfectly with mild flavored halibut. Lets get cookin’! 🙂

Ingredients

Recipe makes 8 servings

  • PREP15 mins
  • COOK10 mins
  • READY IN25 mins

1/2 cup grated Parmesan cheese

1/4 cup butter, softened

3 tablespoons mayonnaise

2 tablespoons lemon juice

3 tablespoons chopped green onions

1/4 teaspoon salt

1 dash hot pepper sauce

2 pounds skinless halibut fillets

Directions

  1. Preheat the oven broiler. Grease a baking dish.
  2. In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
  3. Arrange the halibut fillets in the prepared baking dish.
  4. Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.

Sounds pretty simple right? I liked this recipe because it feeds a larger crowd and since the holidays are coming up, I have a feeling more of you will be having parties!

Well it’s been quite a crazy week, but I’m so excited I get to see a dance company perform today and then it’s my turn to perform tonight and tomorrow!! Wish me luck!
