It’s almost Friday for all of you hard workers out there!
Have some cake tomorrow, you deserve it. And speaking of cake, I made you a cake…..
Well actually, it’s my “birthday” cake because I didn’t really want one for my actual b-day. Nothin’ wrong with that right? Besides, if you know me at all, you know I can’t really turn down oatmeal.

Okay, so back to cake. This cake isn’t really a “birthday” cake.
It’s more of a smorgasbord of flavors to equal the perfect balanced baked oatmeal. It has my typical oatmeal ingredients plus shredded coconut (yay healthy fats), banana, and mini chocolate chips of course!
Everything is better with chocolate.
And butter extract. SUCH a yummy addition!
You’ll want to blend everything up in your stick blender, transfer to the baking dish, watch the magic happen, and DEVOUR.
- Serves: 1
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
Ingredients:
1/3 of a ripe banana
2 tbsp. plain, nonfat Greek yogurt
3 tbsp. Liquid Egg Whites
1/8 tsp butter extract (optional, but recommended)
1/4 tsp vanilla extract
**Milk of choice as needed**
1/2 cup rolled oats
Pinch of salt
1/4 tsp baking powder
Dash of cinnamon
1/2 tbsp. shredded coconut
For the frosting:
2 tbsp. plain, nonfat Greek yogurt
**Stevia drops/sweetener to taste**
1 tsp mini chocolate chips
Directions:
- Preheat oven to 350° Fahrenheit and spray a single serve baking dish or ramekin with PAM and set aside.
- In the order listed, throw everything into your immersion blender except the frosting ingredients and blend until smooth.
- Transfer to your prepared dish and bake for about 15 minutes, or until top is firm.
- Meanwhile, prepare your Greek yogurt “frosting”. When the oats have cooled off a little bit, spread the frosting on top and then top with your chocolate chips.
- DEVOUR.
