Some News….

So, like the title of this post says, I have some news…I’m not really sure how to tell you this…I’ve definitely been putting it off because I didn’t want to worry anyone.

I’ve been feeling some weird reactions after I eat my breakfast every morning like sneezing, coughing and sore, itchy eyes. This has been going on for a couple weeks now, so yesterday I went to our health center and I was told some shocking news…

I have a severe allergy to oats.

Wow, it’s April already?! Where’s the nice weather?

Seriously though, I don’t know what I would do if I was allergic to oats! That would be so annoying! Sorry if worried you all, but come on, it’s April Fools Day!

So since I’m 100% not allergic to any oat products, here’s a fabulous oatmeal recipe for you today. 🙂

Chocolate cake for breakfast?? You bet!


Chocolate Cake Baked Oatmeal
(A Work in Progress)

  • Serves: 1
  • Prep Time: 10 minute
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Ingredients:
3 tbsp. Liquid Egg Whites (or 1 egg white, but protein content will change)
1 tbsp. plain, nonfat Greek yogurt
1/3 of a ripe banana
1/2 tsp peanut butter
1/4 tsp vanilla extract
1/2 cup rolled oats
Pinch of salt
1 tbsp. cocoa powder
1/4 tsp baking powder
*Couple tbsps. of milk as needed*
For “frosting”:
1 tbsp. PB2
1 tbsp. plain, nonfat Greek yogurt
1/2 tsp cocoa powder
*water as needed*

Directions:

  1. Preheat oven to 350° Fahrenheit and spray a single serve baking dish or ramekin with PAM and set aside.
  2. In an immersion blender, place all ingredients in the order listed except the “frosting” ones and blend until smooth.
  3. Pour mixture into the prepared ramekin and bake for 15 minutes.
  4. Meanwhile, prepare the frosting in a small cup. Spread this on top of the oats when they have cooled a bit.
  5. ENJOY! 🙂

I somehow managed to wiggle it out of the dish after it set for a little, so if you feel the need to do so, please do! 🙂
