Seriously though, I’m REALLY sick of the weather. It’s so depressing, it will be April soon!

Well anyway, at least I have pancakes to cheer me up! 🙂 Yup that’s right, it’s Stacked Saturday!
These beauties were brought to you by Monique from Ambitious Kitchen, but I adapted the recipe just a bit! Packed with 20 grams of protein and an amazing flavor, (thank you blueberries), these pancakes are sure to put a smile on your face. And in your stomach.
The ingredients? Simple! Oats, banana, baking powder, cinnamon, egg whites, cottage cheese, and optional blueberries! (Actually not optional though…).
I added some PB2, because why the heck not?!

Oatmeal Cottage Cheese Banana Pancakes
(Adapted from Ambitious Kitchen)
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 5 minutes
- Total Time: 7 minutes
Ingredients:
1/3 of a ripe banana
4 tbsp. Liquid Egg Whites
1/4 cup cottage cheese (I used 1%)
1/2 cup rolled oats
1 tsp baking powder
1/2 tsp cinnamon
1/2 tbsp. PB2 (for topping)
2 tbsp. fresh or frozen blueberries (for top or on pancakes)
Directions:
- Preheat nonstick skillet to medium heat.
- Place all ingredients in a stick blender and blend until smooth. You could also use a regular blender! Drop batter by 2 tbsp. full for each pancake and cook until bubbles appear on the surface or until the bottom is golden brown. Flip, and cook the other side for about 1-2 more minutes.
- Transfer pancakes to a plate as you cook them and top with maple syrup, PB2, and blueberries!
