I just love him!
I love him like I love peanut butter and jelly sandwiches.
Oh and speaking of that, today I’m sharing an oatmeal recipe that touts the awesomeness of everyone’s favorite childhood sandwich, but with no added sugar! (Hence the question mark next to the jelly in the title…) This recipe is adapted from Claudia of The Breakfast Drama Queen, who you may have seen in one of my Link-Love Saturday posts. Instead of using jelly, she uses fresh strawberries and/or grapes! Either one works fine, but I decided to use grapes this morning. Of course, I also added in an egg white to make it more nutritionally balanced for someone like me, but feel free to omit this if you think it will be unnecessary.
Peanut butter and jelly isn’t just a great sandwich – it makes a fun and flavorsome oatmeal!
Peanut Butter and (No) Jelly Oatmeal
(Adapted from The Breakfast Drama Queen)
Ingredients:
1/2 cup milk of choice (I used unsweetened vanilla almond milk)
1/2 cup water
2 tbsp. PB2 (or 1 tbsp of regular peanut butter)
1/2 cup rolled oats
Pinch of salt
1/4 tsp cinnamon
1/2 tsp vanilla extract
3.5 tbsp Liquid Egg Whites
8-10 fresh grapes or strawberries
Directions
- In a small saucepan, add the PB2 to the 1/2 cup water and stir until all the powder is gone. Now bring both the almond milk and water to a boil and add the oats. Reduce heat to medium.
- Once more of the liquid has absorbed, add the salt, cinnamon, and vanilla extract and stir. If using normal peanut butter, add now. Wait about 2 minutes and then turn heat to low. Slowly pour in the egg whites and begin whipping them until all traces of egg whites are gone.
- If using grapes: When the oatmeal is nearly ready, add in most of the grapes, reserving some for the topping. If using strawberries: When the oatmeal is nearly ready, slice the strawberries. Stir in most of the strawberry slices, reserving some for the topping.
- When you are pleased with the consistency of the oatmeal, transfer to a bowl and top with the rest of the grapes or strawberries.

Claudia’s Notes:
**Alternatively, use 4 tablespoons (¼ cup) of PB2. In the saucepan, mix the PB2 with the 1 cup of water. Add the 1 cup of almond milk, and proceed with Step 1 of the recipe.
**For a fun twist, use her homemade Honey Roasted Peanut Butter!
**For a sweeter oatmeal, add in 1-2 very ripe mashed bananas, or 1-2 tablespoons maple syrup
