I’ve got so much link-love for you today that your mind will be blown…BOOM…haha I’m not even sure how I stumbled upon her blog, but after reading her About Me page, I was instantly inspired. She’s, young, witty, and creates scrumptious recipes all by herself that are vegan, gluten free, grain free, sugar free, low calorie, low carb, and really, really fun to eat. Wow that was a lot of words….she also became the caretaker for her mother, suffering of Stage II breast cancer, at age 13. Now “almost 30 radiation treatments, 5 rounds of chemotherapy, and 3 surgeries later”, Kelly is so proud of her healing mother. I would be too, this is what inspired me so much!

Similar to Kelly, I found my love of food through my deprivation of it. To understand more about this, please read my What’s A Live-It page. We both encountered situations of an unhealthy weight-loss period, sometimes depriving our bodies during the weight loss, counting every calorie, and doing what we could to work it off.
It was a vicious cycle that unfortunately affects far too many young women. But anyway….
Kelly is a 16 year old high school student based in L.A. who is a vegetarian, foodographer, singer, teen chef extraordinaire. Apparently. 😉

That being said, here’s one of my favorite Foodie Fiasco recipes.
Ingredients
- 2 1/2 tablespoons white whole wheat flour
- 2 tablespoons granulated sugar or erythritol
- 1 tablespoon unsweetened cocoa powder
- 1/8 teaspoon baking soda
- pinch of salt
- 3 tablespoons almond milk
- 1 tablespoon unsweetened applesauce, mashed banana, or yogurt
- 1/4 teaspoon vanilla
- 1/8 teaspoon apple cider vinegar
- 1/2 tablespoon chocolate chips
- 1/2 tablespoon unsweetened almond milk
Instructions
- In a large mug, combine the white whole wheat flour, erythritol or sugar, cocoa powder, baking soda, and salt. Add in almond milk, applesauce, vanilla, and apple cider vinegar and stir until uniform and no dry pockets remain. Set aside.
- Combine the chocolate chips and 1/2 tablespoon almond milk in a small cup. Microwave for 45 seconds and stir. If you’re not a microwave user, feel free to do this on the stove top.
- Scoop out 1/2 of the batter in the mug, make an indent, and pour the melted chocolate into the indent. Carefully cover with the other 1/2 of the batter. Cook in the microwave for 1 1/2 to 2 minutes until firm. Alternately, you can bake in the over at 350 degrees Fahrenheit for 12-15 minutes. Devour.
