Happy Memorial Day! (And Some Oatmeal…)

Guess what, you DON’T have to work today. Well, most of you don’t. For those of you who do, I salute you.

And speaking of salute, Happy Memorial Day! 🙂

You might be so focused on unplugging and decompressing over the next few days that something may have slipped your mind.

It’s today, remember?

For one minute on Memorial Day today, let’s all stop everything to pay our respects to the men and women who died in service of our country, especially those who died in battle. Usually the true meaning of Memorial Day has become obscured over time, covered in the haze of barbecue smoke and the unofficial “start of summer”.

On Memorial Day, we honor the sacrifices of prior generations. We honor the sacrifices of the men and women who have served or continue to serve our country.

Before I go on, I’ve had a couple requests for an oatmeal recipe that I posted yesterday on Instagram, and I’m sharing it with you today! 🙂

I used a little bit too much liquid, so you’ll want to scale it back a bit. And this one takes awhile to bake, so be patient! 😉


Mocha Baked Oatmeal with Peanut Butter Center
(Adapted from The Oatmeal Artist)

  • Serves: 1
  • Prep Time: 5 minutes
  • Cook Time: 25 minutes
  • Total Time: 30 minutes

Ingredients:
1/2 cup’s worth of zucchini (or 1 ripe banana)
2 tbsp – 1/4 cup milk of choice
3 tbsp Liquid Egg Whites (or 1 egg white)
1/2 tsp vanilla extract
1/2 tsp instant coffee granules
1 tbsp unsweetened cocoa powder
Pinch of salt
1/4 tsp baking powder
*1/2 tbsp protein powder (optional)
1/2 cup rolled oats
1/2 tbsp peanut butter

Directions:

    1. Preheat oven to 350° Fahrenheit and spray a single-serving ramekin with PAM.
    2. Puree zucchini (or mash banana) and mix with milk, vanilla extract, coffee granules, cocoa powder, and salt by either pureeing in a mini food processor or mashing thoroughly with a fork. (I used my hand blender)
    3. Stir or blend in the protein powder, oats, and baking powder. (I actually blended them, and that’s why it took so long to cook). I recommend stirring!
    4. Transfer half the batter to the ramekin. Add peanut butter to the center (as much as you want). You could keep it in a dollop at the center, or you could spread it as a full layer. It’s your oats! 😉
    5. Top with remaining oatmeal batter and bake for 20-25 minutes.
    6. ENJOY! 🙂
