So thanks to the wonderful Breakfast Drama Queen (aka Claudia), I have a new favorite baked oatmeal recipe.

Yup, Jelly Doughnut Baked Oatmeal!!!
Okay, let’s talk doughnuts for a quick sec. I used to LOVE these bad boys…

Yeah, the chocolate creme-filled ones. OHMYGOSH you guys, I lovvvved those. Now the smell of them makes my stomach drop about 10 feet. Being known for their mouthwatering glaze that many of their doughnuts are covered in, this doughnut is also known for their very own crème filling. This was my jam. And speaking of jam, I HATED the jelly filled doughnuts.
The thought of biting into a doughnut with squirmy, wirmy, jelly in the center made me sick. I was totally scarred.
Think about it, a perfectly normal powdered doughnut. You take one bite, thinking about what kind of delicious filling might be inside, or maybe none at all. Then out comes….raspberry jelly. *Don’t get me wrong, I’m not knocking the Krispy Kreme company or any other jelly doughnut-lover, I’m just stating my opinion!*
Since I’m not a doughnut-lover anymore, this baked oatmeal is the closest thing to it and it’s a DARN good recipe at that! 😀

- Â Serves: 1
- Prep Time: 10 minutes (includes oven preheat)
- Cook Time: 20 minutes
- Total Time: 30 minutes
Ingredients:
2 tbsp. plain, nonfat Greek yogurt
3 tbsp. Liquid Egg Whites
2 tbsp. milk of choice
1/2 tsp vanilla extract
*Sweetener of choice* (I used Stevia, but maple syrup would be great here!)
1/2 cup rolled oats
Pinch of salt
1/4 tsp baking powder
1/2 tsp cinnamon
Heaping 1/2 tbsp. vanilla protein powder of choice
1 tbsp. shredded coconut
For the filling:
1/2 tbsp. jam/jelly of choice
Directions:
- Preheat oven to 350° Fahrenheit and grease a ramekin or single-serve baking dish with PAM. Set aside.
- In a small mixing bowl, add all of the wet ingredients and mix well until everything is combined. Now add the dry ingredients and again, mix well until everything is combined.
- Pour half of the batter into the ramekin and place the 1/2 tbsp. of jelly/jam in the center. Now pour the rest of the batter over this.
- Transfer to the oven and bake for about 20 minutes, or until the top is firm. When done, feel free to sprinkle more coconut or cinnamon sugar over the top.
