?Not-So-Chunky Monkey? Baked Oatmeal

What do you get when you cross a banana, some chunky peanut butter, and top it with chocolate chips?

“Chunky Monkey” Baked Oatmeal!!!

But we’re not making that here today….;)
Today’s version includes creamy peanut butter, so you could say this monkey is not-so-chunky!

If you’re unfamiliar with the name, it comes from the pair of men who created that deliciously fattening ice cream: Ben & Jerry’s. Yup, your best friend in times of need. It’s there for you in the freezer whenever you need it, practically screaming your name.

All in all, the “Chunky Monkey” flavor is banana ice cream with fudge chunks and walnuts. YUM. Now I didn’t do that here, but I still think this oatmeal is pretty darn fantastic.

To me, the word “chunk” doesn’t sound appealing. It just makes me think of the time that I had the stomach flu, and well…..you can guess where I’m going with that description. All in all, “chunk” and I are not friends.

Now that I’ve probably ruined your appetite, allow me to bring it back somehow!😉


“Not-So-Chunky-Monkey” Baked Oatmeal
(Inspired by the B&J ice cream flavor)

  • Serves: 1
  • Prep Time: 10 minutes (includes preheat time)
  • Cook Time: 18 minutes
  • Total Time: 28 minutes

Ingredients:
2 tbsp. plain, nonfat Greek yogurt
3 tbsp. Liquid Egg Whites
1/2 tsp vanilla extract
1/8 tsp butter extract (optional, but recommended)
1/2 cup rolled oats
Pinch of salt
1/4 tsp baking powder
1/4 tsp cinnamon
For the top:
1/3 of a ripe banana, coined
1 tsp peanut butter (or more!)
Good sprinkling of chocolate chips

Directions:

  1. Preheat oven to 350° Fahrenheit  and mist a small ramekin or single-serve glass baking dish with PAM. Set aside.
  2. In a small mixing bowl, mix together the Greek yogurt, egg whites, and extracts until combined. Now add the oats, salt, baking powder, cinnamon and mix well until everything is well-combined. Add in a tbsp of almond milk if necessary!
  3. Top with the banana slices, peanut butter, and chocolate chips and bake for about 18 minutes, or until the top is firm but NOT dry.
  4. ENJOY!:)
