Raspberry Lemon Sunbutter Oats

Hello hello!!!

Happy Saturday pretty people!:) Popping in really quick before I go to work to say hi and share this oatmeal recipe with you all.

Is it STILL raining where you guys are? Seriously, I feel like I barely left my apartment all week because of the weather. Isn’t that what April is for? And May is for the flowers?!

Oh well, let’s eat!:)

After seeing these cookies the other day from Amy of Amy’s Healthy Baking, I knew what fruit I was in the mood for: RASPBERRIES. But then I thought, well I can’t just make a boring raspberry bowl, what combinations are good with raspberries? 

So I do what I always do….head over to The Oatmeal Artist’s recipe page for some inspiration! Raspberry Plum, Raspberry Fudge, Raspberry Lemonade–wait, that was it!!! Raspberry and lemon sounded like the perfect combo to me, especially with it being so gloomy outside. Then I browsed in my cupboard for some nut butter to top it with BECAUSE DUH and I discovered my unopened jar of Sunflower Seed Butter.

TA-DAH!

A.K.A. my daily thought process when trying to figure out what kind of oatmeal I want. Gotta have fruit and some sort of nut butter! I love Sunbutter so far. It’s not really sweet but it’s a little nutty and balanced out the brightness of the raspberries and the tartness of siggi’s yogurt. Oh yeah, forgot to mention that in there. Gotta have my #dailysiggis! Seriously, I think it tastes SO much better than Greek yogurt.

Boom. Breakfast is served.

Hurry, your spoon needs a friend. (A.K.A. your bowl!)


Raspberry Lemon Sunbutter Oats 

  • Serves: 1
  • Prep Time: 3 minutes
  • Cook Time: ~12 minutes
  • Total Time: 15 minutes

Ingredients:
1/2 cup water/milk of choice
Pinch of salt
1/4 cup old-fashioned oats
2/3 cup siggi’s nonfat plain yogurt (or yogurt of choice)
Stevia or other liquid sweetener to taste*
1/2 tsp cinnamon
1/2 tsp lemon extract
1 cup fresh/frozen raspberries
1 tsp (or more!) of Sunflower Seed Butter

*-optional

Directions:

  1. In a small saucepan, bring water to a boil, add pinch of salt, rolled oats, and yogurt, and reduce heat to medium-low. Stir well to combine everything.
  2. This part will take a little bit because you will have to wait for the yogurt mixture to bubble and thicken up a lot. Add in your cinnamon and lemon extract after about 3-4 minutes. Stir well again. At this point, add in your Stevia or other sweetener to taste.
  3. Once it has thickened up a bit, add in your raspberries and stir well until it turns pretty pink! When the oats are of a pleasing consistency, transfer to a bowl and top with your sunbutter and anything else your heart desires!
  4. ENJOY!:)
