This is my Saturday morning, what does yours look like? 🙂
To me, it’s Holy Saturday. To others, it’s Passover.
But, there’s also another weekly “holiday” I celebrate: Stacked Saturday!!
Yes, Saturdays are for protein pancakes, rest, and relaxation. Since my semester is slowly coming to a close, I can finally experience this relaxation again. So let’s start with the basic ingredients for this recipe! You may recognize them cause they’re present in ALL of my oatmeal recipes:
– Mashed banana
– Greek yogurt
– Liquid Egg Whites
– Oats
(Plus protein powder, baking powder, and peanut butter).
Throw everything into an immersion blender and BADA-BING you’ve got protein pancakes!!
Plus I dyed the batter to make it more fun! 🙂
Basic Banana PB Protein Pancakes
- Serves: 1
- Prep Time: 5 minutes
- Cook Time: 12 minutes
- Total Time: 17 minutes
Ingredients:
5 tbsp. Liquid Egg Whites
2 tbsp. plain, nonfat Greek yogurt
1/2 a ripe banana
1/4 tsp vanilla extract
1/2 tsp cinnamon
1/3 cup rolled oats
1/2 tsp baking powder
Pinch of salt
1 tbsp. vanilla protein powder of choice (I used Arbonne)
1 heaping tsp of peanut butter
Directions:
- Preheat a skillet or nonstick pan to medium heat.
- In the order listed, throw everything into an immersion blender and blend until smooth.
- Scoop about 2 tbsp. of batter for each pancake onto the skillet and cook for about 2-3 minutes on each side, or until golden brown.
- Top with the peanut butter and maple syrup! (Alternatively, you could add the peanut butter in the batter).
- ENJOY! 🙂
