I’m 100% Italian and have always loved to cook, but after a trip to Italy last summer I truly appreciated the joy of food and the cooking process. I love to enjoy meals that have a balance of everything in them: protein, carbs/grains, and veggies. I find that I feel more nourished and satisfied after eating a balanced dish, rather than just having a huge bowl of pasta (although there’s nothing wrong with that every now and then!) My main dish recipes are mine unless otherwise noted.
