Lemon Cake Baked Oatmeal With A Blueberry Center

So here’s something to think about: you take a bite into a flavorful, moist piece of cake but think it’s still missing something. What do you think your taste buds want?

I have an answer for that.

Blueberries of course!!

This oatmeal recipe was inspired by the flavor combination from a cake made by Sally’s Baking Addiction. Lemon Blueberry Layer Cake, to be exact. Oh my goodness, a sunny-sweet lemon cake dotted with juicy blueberries and a smooth cream cheese frosting?

This recipe is so easy to make! Throw everything but the blueberries into the immersion blender and voila! 🙂 I’m a huge fan of these because they save so much cleanup time than a regular blender. You can buy one on Amazon HERE! 🙂

You won’t regret it. You won’t regret making this baked oatmeal either.


Lemon Cake Baked Oatmeal With a Blueberry Center
(Inspired by Sally’s Baking Addiction)

  • Serves: 1
  • Prep Time: 10 minutes (includes oven preheat time)
  • Cook Time: 16 minutes
  • Total Time: 26 minutes

Ingredients:
1/3 of a ripe banana
3 tbsp. Liquid Egg Whites
2 tbsp. plain, nonfat Greek yogurt
1/4 tsp lemon extract
1/2 cup rolled oats
Pinch of salt
1/4 tsp baking powder
1/2 tbsp. vanilla protein powder (optional)*
1 tbsp. unsweetened shredded coconut
For filling:
1-2 tbsp. fresh blueberries

Directions:

  1. Preheat oven to 350° and mist a single serve baking dish or ramekin with PAM. Set aside.
  2. In the immersion blender beaker, blend all of the ingredients for the oats in the order listed until smooth.
  3. Pour half of the batter into the dish, and then place the blueberries in the center. Now pour the rest of the batter on top of this.
  4. Bake for about 16 minutes or until the top is set.
  5. ENJOY! 🙂
