That’s right! Another 5-minute, 5-ingredient recipe for your lovely Saturday morning!

I hope your Saturday isn’t as cloudy as mine right now, but have I got good news for you……
These pancakes can be made in about 5 minutes!
I usually attend yoga on Saturday mornings and I don’t usually eat anything before. By the time I get home, I don’t really want to wait a half an hour for a baked oatmeal recipe or have to wait, watch, and stir a stovetop oatmeal recipe. Pancakes cook themselves, so why not right? All I have to do is mix the batter!
- For this recipe, you’ll need your immersion blender (if you have one). If you don’t, that’s okay! Your pancakes will just be more textured than normal due to the oats.
- Use your favorite blend of protein powder: vanilla, chocolate, cinnamon bun, cake, banana cream, orange creamsicle, etc. There’s a lot of wonderful and interesting flavors out there! If you don’t have protein powder or would rather leave it out, add a 1/4 cup more oats and perhaps some PB2? Mashed banana could be nice too! I can’t vouch for the results, but if you try it, please let me know!
- Don’t forget that vanilla extract! It adds a lot of that wonderful fragrance and flavor we all love in our baking. You could also experiment with other extracts too! Almond, butter, coconut, orange, lemon, you name it!
- Cooking times may vary from stove to stove, so judge accordingly.
- Most of all, enjoy!!! The kitchen was made for experimentation, so don’t worry if it doesn’t turn out exactly the way I explain it.
5-Minute, 5-Ingredient Protein Pancakes
- Serves: 1
- Prep Time: 2 minutes
- Cook Time: 5 minutes
- Total Time: 7 minutes
Ingredients:
1/4 cup rolled oats
1 tbsp. flaxseed (I used Bob’s Red Mill brand)
1/2 tsp baking powder
1/2 scoop vanilla protein powder (or flavor of choice)
6 tbsp. Liquid Egg Whites (or 2 normal egg whites)
1/2 tsp vanilla extract (or flavor of choice)
1 tsp peanut butter (or other nut butter)
*Sweetener of choice, if needed*
Maple syrup, for topping
Directions:
- Preheat skillet to medium heat and mist with nonstick cooking spray.
- In an immersion blender, whir all of the ingredients together until smooth. Or, feel free to mix by hand if you don’t have a blender.
- Pour about 2 tbsp. of batter for each pancake and cook for 2 minutes, or until bubbles form on the top. Flip, and cook for another minute or so.
- Repeat until all of the batter is used up, and top with maple syrup, honey, or more peanut butter! Dive in.
- ENJOY!
**NOTE: They have a bit of an egg-y taste, so to combat that, I would add some milk and/or sweetener to the batter!**
