So here’s something to think about: you take a bite into a flavorful, moist piece of cake but think it’s still missing something. What do you think your taste buds want?
I have an answer for that.
Blueberries of course!!
This oatmeal recipe was inspired by the flavor combination from a cake made by Sally’s Baking Addiction. Lemon Blueberry Layer Cake, to be exact. Oh my goodness, a sunny-sweet lemon cake dotted with juicy blueberries and a smooth cream cheese frosting?

This recipe is so easy to make! Throw everything but the blueberries into the immersion blender and voila! 🙂 I’m a huge fan of these because they save so much cleanup time than a regular blender. You can buy one on Amazon HERE! 🙂

Lemon Cake Baked Oatmeal With a Blueberry Center
(Inspired by Sally’s Baking Addiction)
- Serves: 1
- Prep Time: 10 minutes (includes oven preheat time)
- Cook Time: 16 minutes
- Total Time: 26 minutes
Ingredients:
1/3 of a ripe banana
3 tbsp. Liquid Egg Whites
2 tbsp. plain, nonfat Greek yogurt
1/4 tsp lemon extract
1/2 cup rolled oats
Pinch of salt
1/4 tsp baking powder
1/2 tbsp. vanilla protein powder (optional)*
1 tbsp. unsweetened shredded coconut
For filling:
1-2 tbsp. fresh blueberries
Directions:
- Preheat oven to 350° and mist a single serve baking dish or ramekin with PAM. Set aside.
- In the immersion blender beaker, blend all of the ingredients for the oats in the order listed until smooth.
- Pour half of the batter into the dish, and then place the blueberries in the center. Now pour the rest of the batter on top of this.
- Bake for about 16 minutes or until the top is set.
